Blueberry Oats Muffins

Number of Servings: 12

Makes 12 muffins

 

Ingredients

2 cups oats

1/4 teaspoon Stevia

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 cup low-fat vanilla yogurt

1/2 cup orange juice

1/2 cup egg substitute

3 tablespoons olive oil

3/4 cup frozen unthawed blueberries

Healthy Carrot and coriander soup

Ingredients

500g carrots (peeled and chopped)

Large onion (peeled and chopped)

1 tbsp olive oil

1 tsp ground coriander

3 cloves garlic

2 stock cubes (add 2 pints or 4 Cup of boiled water to it)

Fresh coriander (chopped)

Why you should eat them – Each member of the vegetable group is robustly healthful. Virtually all have a low GI and loaded with vitamins and minerals, they are also very low in fat and like all pant foods, cholesterol-free.

What to do – Be generous with your veggies. Instead o f the neglected little pile of overcooked vegetables some people park on their plates, have two or even three different vegetables for your dinner. Look for broccoli, methi, carrots, cauliflower or anything else you fancy. Add vegetables to your rice, stuff your rotis with them, and add juliennes to your idli batter. The ideas are unlimited.
